American Snickerdoodle Cookies

nIngredients
For the dough:
n– 400 g plain flour
n– 200 g caster sugar
n– 100 g soft brown sugar
n– u00bc tsp freshly ground nutmeg
n– u00bc tsp freshly ground cinnamon
n– 1 tsp baking powder
n– u00bd tsp fine salt
n– 250 g unsalted butter
n– 3 eggs
n– 1 tsp vanilla extract

For the flavoured sugar:
n– 50 g caster sugar
n– 1 tsp freshly ground cinnamon
n– u00bc tsp freshly ground nutmeg
nPreparation
Preheat the oven to 220u00b0C/430u00b0F.
nSieve all the dry ingredients into a large bowl: the flour, sugar, spices, baking powder and fine salt.
nIn another large bowl, beat the melted butter, 3 eggs and vanilla extract.
nPour the egg mixture into the flour mixture and use a wooden spoon to combine the ingredients until you obtain a ball of dough.
nLine two oven trays with parchment paper. Form small balls of dough and roll them in the flavoured sugar mixture. Arrange on the oven trays, making sure that you leave sufficient space between each ball. Bake for 8 to 9 minutes. After removing from the oven, leave on the tray for a further 5 minutes (the cookies will continue cooking slightly).
nOnce warm, allow them to cool completely on a rack.
